Blueberry Almond Oats & Wheatberries

1/3 c. whole oats (NOT instant)1/3 c. wheat berries (cooked)3/4 c. almond milk (unsweetened, 40 cal. per 8 oz)1 T. Maple syrup1/4 c. blueberries1 T. almond butterOptional: shredded coconut for garnish
In a small pot, heat almond milk and rolled oats to boiling. Reduce heat and add blueberries and maple syrup; stir and simmer for about 8 minutes.
As oats and almond milk thicken, add cooked wheat berries and continue to simmer another 2 minutes, or under desired consistency is reached.
Pour into a bowl, and mix in 1 tablespoon almond butter (or other nut-butter of choice). Garnish with shredded coconut, if desired.
