Boneless, skinless chicken thighs slow-cooked with mushrooms, peppers, zucchini, onion, shallots, and garlic in tomato paste and chicken broth. Did it on high (6 hours) in the crockpot, adding rice when one hour was left on the time. Paprika, cumin, and black pepper were the spices I used.
Brown the chicken on all sides after briefly marinating in tomato paste, paprika, cumin, salt, pepper, and olive oil. Put whole mushrooms, thick sliced zucchini, diced pepper, and quartered tomatoes in the crockpot. When chicken is browned, add it. Saute small diced onion in oil/tomato remaining in pan, then add to crockpot. Pour chicken broth on top, cook on high for 6 hours or low for 8 hours.
When one hour is remaining on crockpot time, add the rice.
