2 cups water2 cups diced potatoes1/2 cup chopped onion2 tbsp margarine1/2 to 1 tsp dried basil1 bay leaf1 17oz can cream style corn2 cups nonfat milk1 cup canned tomatoes chopped2 tsp salt1/8 tsp pepper1 cup light shredded cheddar cheese1 cup diced ham
Combine first 7 ingredients in large dutch oven, bring to a boil. reduce heat and simmer about 10 minutes or until potatoes are tender. Discard bay leaf. Stir in corn, milk, tomatoes,salt, and pepper. Heat thoroughly. Add cheese, cook over low heat. Stirring constantly, until cheese is melted. 8 servings. Freezes well.
