Black Eye Pea, Collard and Sausage Soup

Ingredients
1 lb of Smoked Turkey Sausage cut lengthwise and diced4 medium potatoes, peeled and diced1 lb frozen collard greens1 lb frozen black eye peas1 medium onion, chopped5 cups water2 cups chicken broth3 bullion1 tbl olive oilsalt and pepper to taste
Directions
prepare black eye peas according to package instructions but add the chicken broth and bullion.

When peas complete, add collards and potatoes.

Heat oil in pan. Brown sausage. Add onions, cook till soft.

Add sausage and onions to pot and simmer on low, covered for 30 minutes.
