Turkey With Stuffing Bake

Ingredients
1 cup diced onion1 cup diced celery1 cup diced carrot1/2 stick light butter1 lb Turkey breast meat cut into bite size pieces1 box stove top stuffing2 eggs, slightly beaten2 cups chicken broth1 tbl ground sageSalt and peper to taste
Directions
In a large skillet over medium heat melt 1 tbl butter. Add onions, celery and carrots. Saute until onions are transparent and carrots and celery are tender. Add stove top stuffing mix and saute for another 1 minute. Add chicken broth. Add egg and turkey meat. Add ground sage and salt and pepper and stir until all ingredients are mixed well. Place in a 13 x 9 inch glass baking dish that has been sprayed with cooking spray. Bake in 350 degree oven for 30 minutes or until brown on top and bubbly. Makes approx. 8 - 1 cup servings.
