My Rainbow Omelet

Ingredients
1/4 cup egg substitute1 tablespoon chopped onion2 tablespoons chopped green pepper1 1/2 teaspoon canola oil3 grape tomatoes3 baby carrots, finely chopped3 left over tater tots
Directions
Makes one serving.

In a small nonstick skillet, saute chopped veggies in oil to desired doneness. Add tater tots to cooking veggies.

Add egg substitue and allow to set enough to flip omelet. Add 1/2 slice of colby jack cheese to the top and serve.
