Virginia's Weight Watchers Chili Recipe

Ingredients
8 ounces extra-lean ground turkey breast1(28 oz) can diced (or crushed)tomatoes1 can Rotel Original tomatoes & green chiles 1 (15 oz) can Black Beans – rinsed & drained1(15 oz) cans fat-free beef broth 2 packages chili seasoningChopped Jalopeno’s (as many or as few as you like)2 small zucchini or 1 large – diced2 yellow squash – diced1 medium onion – diced4 stalks celery – diced1 bell pepper – diced
Directions
(Hint – I puree the squash, zucchini, celery, bell pepper & black beans in the food processor. Then once it’s mixed with all of the other ingredients you don’t see (or taste) the vegetables. I also add additional cumin, chili powder & red pepper just to kick up the taste)

Brown the turkey & onion then add all other ingredients & simmer at least 30 minutes. Makes about 12 cups
(1 cup serving = 76 calories; 1 g fat; 11 g carb; 3 grams of fiber; 5 grams protein)
