mini pepperoni crustless quiche

Ingredients
4 eggs beaten1/2 cup shredded swiss cheese2 oz. Hormel mini pepperoni1/2 medium chopped onion1/2 green bell pepper chopped1/2 red bell pepper chopped 1 tbls. olive oil
Directions
Saute' peppers onions and mushrooms in olive oil till opaque. Beat 4 eggs into a medium bowl adding swiss cheese, and milk. Add sauteed vegetables evenly into a sprayed pie pan then pour egg and cheese mixture over vegetables. Bake at 350 degrees till done 20 to 25 minutes. Season to taste with salt, black pepper, cayenne pepper and nutmeg. Makes 6 servings at 217 calories each
