Chocolate Zucchini Cake

3/4 cup raisins2 eggs1 Tblsp Splenda3/4 cup olive oil1 cup unsweetened applesauce2 cups whole wheat flour1 tsp soda1 tsp baking powder1 1/2 tsp cinnamon1/2 tsp nutmeg1/4 cup skim milk1 square unsweetened chocolate, melted2 cups grated zucchini1 tsp vanilla extract
cook raisins in water until soft. Beat eggs until light & fluffy. Add sweetener, beat until smooth - about 1 minute. Add oil and beat 2 minutes, then applesauce and beat 2 minutes more.
Sift flour with soda, baking powder, cinnamon, nutmeg and add to mixture. Beat until stiff then add milk and stir until smooth. Add chocolate, zucchini and vanilla, stirring well after each addition. Stir in Raisins. Pout into 8X13X2 inch pan. Bake 350 degrees 25 minutes or until done. Cool on rack and cut into 20 pieces.
