Curried Quinoa

1 cup Red Quinoa~0.25 cup chopped onions1 tsp olive oil1 tsp grated ginger root1 tsp curry powder1 tsp ground coriander1/4 tsp cinnamon1/2 cup of frozen peas2 cup water
This makes 4 - 1 cup servings
Saute onion on medium heat in olive oil
Add ginger and Quinoa, stir constantly for ~1minute
Add coriander, curry, and cinnamon
Add ~ 2 c of water
Let simmer for ~15 minutes or until nearly done
Add peas - let cook ~5 minutes until peas are to your liking
Serve warm.
Also, the first time I made this I used a saute pan that I did not have a cover. Quinoa cooks like rice -- preferably make this in a pan you can cover, otherwise you have to keep adding water, like me.
