CHS Roasted Veggie Bagel Sandwich with Garlic Hummus Spread

Ingredients
6 Tbsp roasted garlic hummus spread1 Tbsp olive oil1 cup red bell peppers, sliced1 medium zucchini, sliced1 red onion, sliced1 small yellow squash, sliced1/3 cup crumbled feta cheese
Directions
1. Preheat oven to 425 F.
2. Brush vegetables with olive oil and place on roasting pan or in baking dish.
3. Roast for about 12-15 minutes.
4. Spread the garlic hummus on one side of each toasted wheat bread or bagel, and with feta cheese.
5. Layer with the roasted vegetables. Eat open-faced or as sandwich.
