1 1/2 cup brown sugar3/4 cup buttermilk2/3 cup oil1 medium egg2 cups whole grain whole wheat flour1 cup old fashioned oatmeal1 tsp baking soda1 tsp vanilla extract2 cups chopped rhubarb (fresh or frozen)1/2 cup chopped pecans (optional)
Preheat oven to 325 degrees, grease bottom of two 8"x4" loaf pans. Combine brown sugar, buttermilk, oil and egg, beat well. Add remaining ingredients. Mix just until combined. Pout into loaf pans.
Bake at 325 for 50-60 minutes or until toothpick inserted comes out clean. Cool 10 minutes, remove from pans, cool completely on wire rack. Store in refrigerator or wrap well and .
