Banana Cake

- 2 large ripe bananas- 250ml (8oz) orange juice- 300g (10 oz) self-raising flour (half wholemeal, half white)- 125g (4 oz) brown sugar- pinch of salt- 1/2 tsp of each mixed spice and cinnamon- 1 egg- 1 tbsp oil
1. Mash bananas with orange juice
2. Mix together flour, sugar, salt, and spieces in a bowl.
3. Add the banana juice mixture together with the egg and oil. Combine together
4. Spoon into a lightly oiled 900g (2 lb.) loaf tin.
5. Bake at 170 C/ 325 F/ gas mark 4 for about an hour.
Check the cake is cooked by inserting a skewer or knife into the centre. It should come out clean.
