Black Bean Tacos with Bell Pepper, Mushroom and Onion

1 Peppers, sweet, red, raw, sliced in thin strips1 quarter medium onion, sliced thin1 cup Mushrooms, sliced3 tbsp Trader Joe's Light Mexican Blend Shredded CheeseTrader Joe's Blue Corn Tortillas, 6 tortilla, medium (approx 6" dia)6 Tbsp salsa (Trader Joe's Serrano)1 can organic black beans
Slice bell pepper, onion and mushrooms. Saute until tender in nonstick spray. Mix in rinsed black beans to heat through.
Sprinkle shredded cheese onto center of tortillas (1/2 tbsp each). Spoon veggie-bean mixture on top of cheese. Top with 1 tablespoon salsa.
Makes 3 servings: 2 filled tortillas per serving
