Smokey Potato Soup

Ingredients
5 medium Potato1 tbsp Smoked Paprika 2 tbsp Butter 2 tbsp Flour3 cups Chicken Broth1 Tbsp Canola Oil1 Onion diced2 cloves Garlic minced
Directions
start off by cutting up potatoes into cubes and boiling until soft ( about 20 mins). meanwhile caramelize onions in a dutch oven or a skillet on medium high heat. once the onions are caramelized mix in garlic, flour and butter. brown flour for a minute then add broth (if using skillet move ingredients to a pot before adding broth) turn down heat to medium. Once potatoes are soft... drain then mix into onion mixture. Mash the potatoes with a masher. Turn off heat at this point and add milk. Serve warm... makes 8 servings
