Chicken Tuscany

Ingredients
1 lb.chicken breasts, boneless and skinless4 oz. Mozzarella cheese, part skin1 servings Hunt's diced tomato with basil, garlic and oregano1 tab extra light olive oil4 cups fresh spinach1cup sliced mushrooms1 cup cooked couscous1/4 cup white wine (optional)
Directions
Saute chicken in nonstick frying pan with 1 tab of water approx 3minutes each side. Add mushrooms and tomato sauce and cook on medium heat for several minutes longer. Add spinach and cook until wilted . Add 1/4 cup of white wine, place cheese on each piece of chicken. Cover fry pan, remove from heat. Serve when cheese is melted. Spoon onto cooked couscous. Serves 4
