Chicken Fried Steak (from parade)

2 tenderized round steaks (1/2 lb each)2 Tablespoons salt (for brining)Vegetable oil (for frying)2 cups self rising flour1 tsp paprika1 tsp onion powder1 tsp garlic powder1 tsp black pepper1 tsp Kosher Salt
Makes 2 generous portions
1. Places steaks in a shallow dish and mix salt/water to cover. Refrigerate 2 hours or overnight.
2. In a deep skillet heat 2 + inches of oil (enough to cover) to 350 degrees.
3. In a shallow bowl, stir together flour, paprika, garlic and onion powders, salt and pepper. One by one, lift steaks out of the brining solution and drop into the seasoned flour. Coat well, shake off excess. Repeat, dipping coated steaks back into the brining solution, then the flour.
4. Slip steaks into the hot oil. Fry 6 minutes on each side. Remove, let rest 10 minutes before cutting.
