Gina's Beet Soup

Ingredients
beets, apple, olive oil, salt, chicken stock, orange juice, ginger root, toasted walnuts for topping
Directions
4-6 servings. Steam quartered beets, skin. Combine oil, onions, salt and curry powder. Stir and cook for 3-4 minutes. Add beets, apple, stock and orange juice. Simmer, covered for 30 minutes. Season with ground ginger. Puree with hand or counter-top blender. Sprinkle with toasted walnuts.
