Banana Applesauce Bread

1 tsp lemon juice1/4 cup fat free unsweetened soymilk3 overripe bananas, mashed1 cup unsweetened applesauce1 tbsp molasses1 cup sugar2 cups whole wheat pastry flour1 tsp baking soda1/2 tsp baking powder1/2 tsp nutmeg1 tsp cinnamon1 tsp vanilla extract2 tbsp maple syrup
Mix lemon juice and soymilk and whisk together. Set aside. Cream together bananas, sugar, molasses, and applesauce until well mixed. In a separate bowl, mix dry ingredients (flour, baking soda, baking powder, cinnamon, and nutmeg. Add wet mixture, soymilk/lemon juice mixture, vanilla, and maple syrup to dry ingredients and mix until just combine. Pour into a greased (or cooking spray-coated) loaf pan. Cover top with an aluminum foil tent and bake in a 350 degree oven for 45 minutes or until a toothpick inserted in the middle comes out clean (up to an hour).
