Caramelized sweet potato wedges

Ingredients
2 tblspoons butter 2 medium sweet potatoes or yams 3 oz fresh o.j 1/4 cup light brown sugar/will try to replace w/Splenda 2 tblspoons granulated sugar salt & fresh pepper (optional) Zest of 1 orange
Directions
Peel yams,cut lengthwise into wedges 1/2 wide...In a large saute pan over medium heat melt butter, add yams, stir until coated with butter, add 1 cup water and the o.j., cover and cook until yams are fork tender..Remove cover, reduce heat, continue cooking until most of liquid has evaporated
Combine sugars and sprinkle over yams until coated, continue cooking until the sugar caramelizes, stirring so as not to burn. When caramelized remove from pan, garnish with zest...Serve
