Chicken-Stuffed Mushrooms

Directions
One package of six Trader Joe's Portabella Stuffing Mushrooms.25 medium red onion (or portion and type of onion to taste preference)Four tablespoons Best Foods Canola MayonnaiseOne teaspoon garlic powder (or portion to taste preference)One tablespoon black pepper (or portion to taste preference)One tablespoon oregano (or portion to taste preference)Four teaspoons grated Parmesan cheeseTwo tablespoons I Can't Believe It's Not Butter.5 cup 2% Shredded Cheese
1. Wash and remove any stems from mushrooms.
2. Chop stems and saute them with the onion in the margarine.
3. Saute until onion is soft then remove from heat, allowing to sit for 5 minutes.
4. Add garlic powder, black pepper, oregano, chicken, mayonnaise, and shredded cheese to onion mixture and mix well.
5. Stuff the mushroom caps with the mixture.
6.Shake Parmesan cheese over stuffed mushrooms.
7. Place under broiler, watching closely, until stuffing is bubbly.
Makes 6 individual stuffed mushrooms.
