Ingredients:Baby Portabella Mushrooms, fresh, 3 cup (or 1 package), wholeOikos Organic Greek Yogurt, Plain, 3/4 cup (6 oz)Olive Oil, 2 tbsp Red Ripe Tomatoes, 2 slice, thin/small Canadian Bacon, 2 slices (6 per 6-oz pkg.) Panko Breadcrumbs Italian Style 3/4 cup Salt, 1 dash Kraft Free Shredded Cheddar Cheese, 1/4 cup Baby bell cheese, 2 serving
Carefully remove stems from mushrooms and set caps aside. Chop stems, bacon, tomato, cheddar cheese. Add to this mixture the bread crumbs, yogurt, oil and salt. Mix until combined.
Cut baby bell cheese's into thin slices.
Spray non-stick spray in shallow baking dish, and place mushrooms in. Lay one slice of baby bell cheese on top of each mushroom and place in oven.
Banke in 350 degree oven for 20 minutes with foil draped over the top. After 20 minutes, remove foil and increase temp to 500 or Broil for 2-5 minutes until cheese is completely melted. Remove allow to cool, and serve.
Should make about 5 servings of 5 mushrooms each, depending on the size of the mushrooms.
