Vegetable Fried Rice

Ingredients
3 Cups cooked brown rice, chilled1/4 cup mixed vegetables2 eggs1 1/2 tablespoons vegetable oil
Directions
Heat oil in frying pan, add eggs and scramble in pan until small balls form. Add rice and vegetables & fry until slighly crispy. Add soy sauce if desired. Makes 4, 1 cup servings.
