Zucchini Bake

Ingredients
6 cups Shredded Zucchini (w/ peel)3/4 cup plain bread crumbs3/4 cup cream of mushroom soup3/4 cup reduced fat shredded cheese blend1 tsp garlic salt1 tsp pepper
Directions
Shred the zucchini and pat dry with a few paper towels. Mix remaining ingredients together with zucchini in a 9" x 12" baking dish. Bake at 325 degrees for about 20-30 minutes until cooked through. Serve immediately.

    This was great! Very large servings and filling. I kinda created my own version and added 7 oz cubed chicken breast and 1/2c french's fried onions. This only added 35 more calories per serving and gave us a protein boost. Also, used 98% ff soup and panko bread crumbs. Thanks for the recipe!!! - 7/14/09

    This was good. My husband really liked it. I used 98% fat free Cream of Mushroom soup so the fat content would be even less. Very creamy and a really nice change of pace. - 6/19/09

    I loved having something healthier that was easy to prepare as a side for Thanksgiving. Only 4 stars because it wasn't tasty enough to become a Tday tradition. Nobody complained though and there wasn't much left over! - 11/27/08
