1 Large head Cauliflower2 Tablespoons Olive OilKosher salt and pepper (to taste)
Preheat oven to 425 degrees. Spray a large rimmed cookie sheet with cooking spray, set aside. In a large bowl put your cauliflower which you have rinsed, drained and chopped into 1 to 2 inch pieces. To the cauliflower add the olive oil and gently toss together. Place cauliflower mixture on baking sheet and sprinkle with salt and pepper. Bake at 425 degrees for 15 minutes. Makes 6 to 8 1 cup servings.
