Chop vegetables and place in large bowl. Add olive oil and salt & pepper to taste and toss until vegetables are coated. Evenly spread vegetables on two jelly roll type baking sheets and place in preheated 400 degree oven. Cook vegetables about 25 minutes, stirring half-way through.
