Lizzielicious Veggie Enchiladas

One ZucchiniOne Green PepperOne yellow onion3 oz. light cream cheese1.5 lowfat shredded Mexican cheeseLarge can green enchilada sauce14 Corn TortillasOne can black beans
Chop veggies and saute approximately five minutes with cooking spray. Mash black beans and cream cheese together with fork. Mix 3/4 cup cheese and veggies. Heat each tortilla in pan with cooking spray on each side, just long enough to soften up. Cover bottom of pan with enchilada sauce. Fill each enchilada with the mixture, roll, and place in the pan seam side down. Cover enchiladas with remainder of sauce. Bake at 350 degrees for 20 minutes. Top with remaining 3/4 cup of cheese. Bake an additional 10 minutes.
