Artichoke and Spinach balls/cups

Ingredients
Artichokes canned in water- 1 can drained & crushed.1 cup frozen spinach, defrosted and water pressed out2 tbsp of lite mayo1/3 cup shredded pizza cheese1/4 cup italian bread crumbs1 tbsp of lemon juice2 tsp of diced garlicdash of hot sauce, pepper
Directions
Use a pasty blender to crush artichokes. Add pressed spinach, garlic, mayo, cheese and breadcrumbs and mix well.
Use a mellon baller (or a 1 tablespoon scoop) . Use a mini muffin pan to bake individual balls/cups. Sprinkle parmesan and romano cheese on top of each cup.
Bake at 350 degrees 10 - 20 minutes or til brown.
