2 chicken thighs1 large potato2 medium carrots1 cup chopped winter squash (pumpkin)0.5 tbsp olive oil
Chop potato, drizzle with some of the olive oil, salt and roast 20 minutes.
Add other chopped vegetables and chicken, drizzle with the remainder of the oil, salt and roast for an additional 20 minutes.
Garnish with chopped garlic chives.
