Michelle's Spring Salad

Ingredients
1 container of Spring Mix with Spinach1 container of fresh mushrooms1 1/2 vine-ripe tomatoes1 European cucumber, peeled and sliced2 whole carrots, peeled and sliced1/2 cup of sunflower seeds2 eggs, hardboiled and diced1/2 of white onion (or sweet onion), peeled and diced
Directions
Cook the eggs, peel and let cool
add the spring mix, cukes, sunflower seeds, tomotoes, carrots, onions, fresh mushrooms, etc.
Mix and Serve.
Makes 10- 1 cup servings
