Sweet & Sour Red Pepper Soup

Ingredients
1 large Red Bell Pepper 1 Large Red Ripe Tomato2 cloves of Garlic1/4th tsp Brown Sugar2 cups Vegetable stock1 tbsp olive oil1tsp chopped parsleySalt as per taste
Directions
Rinse and dry the bell pepper. Roast bell pepper (smear some olive oil )and 2 cloves of garlic(skins intact) in an oven for 20 mins.
Remove from oven and cool. Heat olive oil in a pan. Peel the garlic, chop finely and saute in olive oil. Chop the roasted pepper and tomato and saute in the pan.
Add 2 cups of veg stock, brown sugar, salt in the pan and cook for 10 mins.
Remove from heat. Cool, blend.
Reheat bringing to a boil. garnish with chopped parsley and pepper
