Confetti Bean Salad

1 16 oz. can of kidney beans, rinsed & drained1 15 oz. can garbanzo beans or chickpeas,rinsed & drained1 1/2 cups frozen peas1 1/2 cups frozen corn1/2 cup chopped onion1/2 cup chopped green pepper3 Tablespoons red wine vinegar or cider vinegar2 Tablespoons olive oil or canola oil 1 garlic clove, minced1/2 teaspoon salt1/4 teaspoon pepper
In a large bowl, combine the first 7 ingredients. In a small bowl, combine the vinegar oil, garlic, salt & pepper until blended Pour over bean mixture; toss gently to coat. Cover & refrigerte for at least 4 hours. Makes ten 3/4 cup servings.
