Braised cabbage with apples

3 T unsalted butter1/2 medium white onion, thinly sliced1 carrot, halved lengthwise and cut into 1/2 inch pieces1 tsp caraway seeds1 T honey1 head green, red, or Savoy cabbage, cored and chopped1/2 cup apple cider2 T apple cider vinegarsalt and pepper to taste
In a large pan, melt the butter, and then add onion, carrot, garlic, and apple. Saute until the onions are translucent, about 5 minutes. Add the honey and caraway seeds, toss to mix. Add cabbage and apple cider and stir to mix. Cover, stirring occasionally for 15-18 minutes or until the cabbage is soft. Add the vinegar and stir uncovered until the liquid has evaporated, 2 to 3 minutes. [Note: I had a lot of liquid from my cabbage, so I drained it when everything was mixed and soft.]
Season with salt and pepper to taste.
