Potato Leek Parmentier

Ingredients
6 Potatoes- peeled1 Leek- cleaned and sliced2 tsp Chicken Bouillion Concentrate3.5 cups WaterPepper to taste2 tbsp Sour Cream2 tbsp Margerine
Directions
Wash, peel and cube potatoes. Clean and slice leek. Add to pot with bouillion concentrate, water and pepper. Bring to boil and boil until potatoes tender. Mash in pot with potato masher to "puree". Add sour cream and margerine and stir. Makes 8 servings.
