Spanish Rice (with Quinoa instead)

2 Tbs Olive Oil1 cup (dry) quinoa1/2 cup chopped onion2 cups chicken broth1 can chopped tomatoes with green chilies (such as Rotelle)1 Tbs Chili Powder1 teaspoon salt
makes approximately 4 half cup servings of "Spanish Rice"
Place medium pot on stovetop and add Olive Oil
Add onion and saute for a short time
Add dry quinoa and toast (along with onion) for approx 5
Add broth, tomatoes&chiles, Chile powder & salt
Cover and bring mixture back to a boil
Turn heat to low and simmer for 10 to 12 minutes until grain appears soft and germ ring appears
