Introduction

I found a similar recipe on a website before, but it called for tomatillos and not nearly enough mango! I found a similar recipe on a website before, but it called for tomatillos and not nearly enough mango!
Number of Servings: 2

Ingredients

    Mango Salsa
    1 large mango
    1 medium tomato
    1/2 cup red onion
    1 cup canned black beans rinsed
    2 tbsp fresh cilantro (or 2 tsp dried)
    juice of one small lime
    salt and pepper to taste

    Tilapia

    2 3-4 ounce tilapia fillets
    1 tsp cumin
    1 tbsp chile powder
    2 tsp oregano
    salt and pepper to taste

Directions

For Mango Salsa-

Chop mango, tomato, and onions and put in medium sized bowl. Add rinsed black beans, lime juice, cilantro, and salt and pepper.

For Tilapia-

Mix cumin, chile powder, oregano, and salt and pepper in small dish. Rub spices on fish.
In a nonstick pan (sprayed with Pam) cook the tilapia for approximately 3-4 minutes on each side, or until the fish flakes easily with a fork.

Serve hot fish with cold mango salsa on top, or on the side with a side of brown rice. Enjoy!

    What temp do you cook the tilapia at? - 7/31/09

    I really enjoyed this recipe with the exception of the spices being a little overpowering. I would cut back on the chili powder a bit next time. I ate it on a bed of brown rice and topped it with the salsa and it was delicious all mixed together! - 11/14/11

    Should i double the recipe if i am serving a family of 5? - 7/6/10

    I would double the whole recipe for 5, the fish tastes best with a nice coat of spices on it- and its always good to have more salsa if people want extras. Enjoy!
