black bean quesadilla

Ingredients
1 large tortilla1/3 cup black beans1/3 cup canned corn2 tbs roasted red peppers2 tbs chopped onion1 teaspoon red pepper flakes1 Tbs fresh cilantro1/4 teaspoon cumin1 oz shredded monterey jack cheese
Directions
Mix together corn, roasted red peppers, onion, red pepper flakes and cilantro
Mix together black beans, cumin & salsa
Warm a large frying pan
Toast tortilla
Layer black bean mixture & corn on one half of tortilla
Top with shredded cheese
Fold tortilla over layered mixture
cook for approx 2 minutes
flip and cook approx 2 additional minutes
Serve with sour cream
