Kim's Curried Chicken Salad and Chutney Sandwiches

Ingredients
8 slices sara lee delightful 45 calorie bread1 chicken breast, boneless, skinless2 T minced celery2 T minced sweet onion4 dried apricot halves, minced4 T kraft low fat olive oil mayonnaise1/2 t creamy peanut butter1 1/2 T Madras Curry Powder1 tsp. Montreal Chicken seasoning1 T Major Grey's Mango Chutney
Directions
Pound chicken breast thin. Spray non stick skillet with non stick spray like pam. Sprinkle chicken with Montreal seasoning and 1/2 T of curry powder. Cook until no longer pinkou.. Cool and roughly chop. In bowl combine mayo, remaining curry powder, apricots, p. butter, celery and onion. Combine well and add in chicken. Toss to coat. Spread 4 slices of bread with chutney. Top with 1/4, each, of chicken salad. Top with remaining slices. 1 serving = 1 sandwich
