Nondairy Broccoli potato soup

Ingredients
* Broccoli, fresh, 1 bunch (remove) * *Potato, raw, 4 cup diced (remove) * *Knorr Vegetarian Vegetable Bullion Cube (each), 1 serving (remove) * Water, tap, 10 cup (8 fl oz) (remove)
Directions
peel potatoes
add to pot with water and bullion and cook until potatoes fall apart easily
add chopped broccoli and cook until tender, but don't over cook
Remove from heat, and puree with an immersion blender.
Taste, and season with salt and pepper.
If you want to make it more traditional, grate lactose free cheddar on top when you serve.
