Tofu Deviled "Egg" Salad

Ingredients
1 pkg Mori-Nu silken tofu (extra firm)1 tbsp vegan mayo1 tsp yellow mustard1/2 tsp black pepper5 generous pinches black salt (kala namak)1/4 tsp turmericDash of paprika or chile powder
Directions
Makes 4 servings for sandwich filling.

Cut 1/3 block of extra firm silken tofu into tiny cubes. In a separate bowl, mash other 2/3 block until it reaches consistency of ricotta cheese. To the bowl, add vegan mayo, mustard, pepper, black salt, turmeric and dash of paprika. Mix well. The mixture should resemble moist mashed egg yolks. Fold in the cubed tofu until incorporated. The cubes mimic the texture of egg white. Serve on sandwiches or over greens. Feel free to customize to your taste using chopped celery or onion.
