ABC Salad

Ingredients
1/2 cup canola oil3 tablespoons lemon juice, divided1 tsp. sugar1/4 tsp. salt1 c. red apples, diced2 cups fresh broccoli florets3 tbsp. parmesan cheese, shredded
Directions
In a bowl, whisk the oil, 2 tbsp. lemon juice, sugar and salt. Add dried cranberries, let stand for10 minutes. In a large bowl, toss apples with remaining lemon juice. Add the broccoli, cranberry mixture, and parmesan cheese, toss to coat. Cover and refrigerate for 2 hours or until chilled. Toss before serving.
