Flax meal/Almond meal pancakes

Ingredients
1/2 cup flax meal1/2 cup almond meal1/4 cup heavy whipping cream1 tblspn ricotta or cottage cheese (whipped in food processor)1/4 tspn baking powder2 eggs2 teaspoons coconut oil1/2 scoop Jay Robb Vanilla Whey Protein (or any flavor)
Directions
Whip cottage cheese in a food processor until smooth. Mix all other ingredients and stir in cottage cheese. Drop onto hot griddle. I spray butter-flavor Pam on a non-stick griddle. These do not really bubble up like normal pancakes, so you need to keep an eye on how brown they are getting on the bottom. This made six pancakes for me and I ate 3 per serving.
