Asparagus & Goat Cheese Quiche

5 stalks asparagus2 large eggs1 egg white3/4 cup low fat milk 1%1/4 tsp salt1/8 tsp pepper2 ounces goat cheese
Preheat oven to 425 degrees. Spray 4 five ounce ramekins with cookiing spray. Fill a large bowl with ice and cold water and set aside.
Place asparagus in a shallow dish with 2 TBSP water, cover with vented plastic wrap and microwave on High until bright green and just tender, about 3 1/2 minutes. Carefully uncover (as the steam will be hot), place in ice bath to cool and drain.
Wisk together the eggs, egg white, milk, salt and pepper until well blended. Divide the goat cheese and asparagus among the ramekins and pour the egg mixture into the ramekins. Place the ramekins on a rimmed baking sheet.
Bake until just set (center should still jiggle a little) about 15 minutes. Serve warm or cool.
