Eggplant and Goat Cheese Salad

Ingredients
* 2 tbsp Extra Virgin Olive Oil * 2 tbsp coconut oil * 1 tbsp balsamic vinegar * 1 cup pinenuts * 1 Sea salt * 3 oz goat cheese * 2 eggplant * 1 pepper * 1 cup basil
Directions
Prep: Cut eggplant into 1-inch wide slices. In a dry sauté pan over medium heat toast pinenuts being careful not to burn. Roll up basil leaves and slice into thin ribbons.

To prepare: Place a grill pan over medium-high heat or preheat an outdoor grill. Coat eggplant with coconut oil. Grill about 2-3 minutes per side. Remove from grill and place on platter. Sprinkle with pine nuts, crumbled goat cheese and basil. Drizzle with olive oil and vinegar
