Banana Split Dessert

2 cups graham crackers crumbs (about 32 squares)4 Tbs. light margarine, melted1 (12 ounce) can fat free evaported milk, cold1/4 cup cold skim milk2 packages sugar-free instant vanilla pudding mix2 medium bananas, sliced1 can (20 ounces) unsweetened crushed pineapple, drained1 carton fat-free cool whip, thawed3 Tbs. walnuts, chopped3 Tbs. fat-free chocolate syrup5 maraschino cherries, quartered
Combine graham cracker crumbs and melted margarine; press onto bottom of 13"x9"x2" dish coated with nonstick cooking spray. In a bowl, whisk cold evaporated milk, cold skim milk and pudding mixes until slightly thickened, about 1-2 minutes. Spread evenly over crust (by far the hardest part of this recipe!). Layer bananas, pineapples, then cool whip. Sprinkly with nuts;, drizzle with chocolate syrup. Top with cherries. Refrigerate at least 1 hour before cutting. Yeild: 15 servings.
