Easy red velvet cupcakes

Cake1 package yellow cake mix4 tablespoons red food coloring2 tablesspoons unsweetened cocoa poweder1/4 cup vegetable oil5 eggs1 cup buttermilk OR*1 cup 2 percent milk and 1 tablespoon distilled vinegarIcing2 cups and 2 tablespoons of powdered sugar4 tablespoons softend butter (unsalted)8 oz cream cheese softened1 teaspoon vanilla
Blend cake ingredients together with blender or stand mixer as package instructions on cake mix.
Bake for 18- 21 minutes. I found this recipe online it states it make 24 cupcakes. It made about 28 cupcakes for me.
Blend all Icing ingredients together. Fully cool cupcakes before icing.
*If you like a more chocolatey red velvet you can add extra cocoa powder. I didn't have buttermilk so I made my own with 2 percent milk and vinegar. Let it sit for 5 minutes before adding to cake mix.
