Gingered Sweet Potato & Carrot Soup

1 tbsp olive oil1 medium onion, chopped2 c low sodium chicken / veggie broth1 medium sweet potato, peeled and diced5 large carrots, peeled and slicedPlain non-fat Greek yogurt (if desired; not incl in calorie count)
Heat oil in large saucepan; add onion and cook until soft (about 2-3 min). Add stock, plus 2 cups water. Then add sweet potato, carot and ginger. Bring to a boil, reduce heat and simmer until veggies are tender (approx 15 min).
Puree in blender / food processor until smooth (you may have to do this in batches, depending on size of blender). Best to let contents cool first.
Pour all batches back together, mix up. Heat and serve, with dollop of yogurt if you'd like!
