1 fresh egg white3 saltine crackers, crushed/crumbled1.5 oz (1/2 package) of Salmon in bag packed in waterdash of pepper
in a bowl, mix together crushed cracker and egg white. Add a dash of pepper to the mix and then mix in 1.5oz pink salmon. divide mixture in 1/2 and put into a medium low heat skillet sprayed wiht FF spray oil. cook on both sides like a pancake until golden brown. Serve and enjoy. You can garnish with fresh basil if you'd like.
