rice and cheese quiche

Directions
all ingredients listed above, plus salt, black pepper, chipotle pepper powder, minced shallots, minced fresh garlic, and any other seasonings to taste.
butter a 9x9 casserole dish.
cook rice as directed on package.
shred 1 C cheese (if not preshredded).
chop all veggies and toss them with the added seasonings.
evenly spread a layer of rice on bottom of dish (about 1/3 of the rice on hand), cover with 1/3 of veggie mixture, pour some of the egg beaters over these two layers, then cover with a layer with 1/3 of the cheese. repeat with remaining ingredients.
bake at 350 F for 40 minutes, or until inserted knife comes out clean.
