French Bread

Ingredients

4.5 cups of bread flour1 tsp yeast1 Tbsp salta handful of whole oats (approx. .5 cups)2 cups cold unchlorinated water
mix all ingredients in a mixer for 5 minutes. If the dough seems to wet add a little more flour, if it seems to dry at a little more water.
Put in ungreased bowl, cover and let rise for 6-24 hours or until doubled in size.
Using flour, so it doesn't stick to your fingers, fold the dough in on itself 16 times.
Take out of bowl and shape into loaf.
Place on pan dusted with cornmeal. Cover and let rise for another 2-3 hours.
Pre-heat oven to 450 degrees, and warm about 2 cups of water.
Put bread in oven, and immediately throw a 1/2 cup of water into the bottom of the oven. Do this every 5 minutes for 20 minutes.
After 20 minutes turn the heat down to 350 and bake for another 15-30 minutes. Bread is done with the inner temperature hits 190 degrees.
Should make approx. 16 servings/slices.
